Walk a food factory at 10am and it can look spotless. Floors mopped, stations tidy, no droppings on the racking, monitors empty. The quality manager relaxes. Then you walk the same building at 10pm, kill the lights, and watch a German cockroach (Blattella germanica) stream out from behind a motor housing while a rat traces the same skirting board it has used for a month. Most food-facility pest problems are nocturnal. The rodents and cockroaches that cause the majority of contamination findings in South African manufacturing are built to avoid you: they hide during the day and forage once production stops and the lights drop. Why nocturnal pests defeat the daytime audit

Rats (Rattus norvegicus) and house mice (Mus musculus) are neophobic and light-averse. They favour darkness, edges and vertical surfaces, and they establish fixed travel routes that they use night after night. The American cockroach (Periplaneta americana) shelters in warm, damp voids such as drains, sumps and cable ducts and emerges in the dark. The German cockroach (Blattella germanica), the species behind most food-plant infestations, packs into tight, warm harbourage close to food and water and only forages when the environment goes quiet.

In daylight, with machinery running and staff moving, all of this activity is suppressed. A daytime inspector can find static evidence, droppings, gnaw marks, smear on a pipe, but cannot see how many animals are present, where they nest, or which routes they run. That is why a factory can pass a morning walkthrough and still be carrying a population that would fail a retailer audit. Correct species identification compounds the point: you cannot target harbourage you have never seen the pest use.

What a night inspection actually reveals

Live activity and true population size

The single biggest gain is direct observation. In the dark, with a low-light or red-filtered torch, cockroaches feed openly on floors and equipment surfaces, and rodents move along their runways. Counting live insects on a floor for thirty seconds tells you far more about population size than a week of empty daytime glue-board checks. A heavy German cockroach infestation is often only truly visible at night.

Runways and grease rub marks

Rodents secrete oils from their fur that, combined with dust, leave dark rub marks where their bodies repeatedly brush a surface. Look along the base of walls, the tops of pipe runs, the edges of pallet racking and the underside of conveyor frames. Fresh smear is greasy and dark; old smear is dry and flaky. Runways in dust and disturbed insulation confirm the routes. Mapping these at night lets the technician re-site stations onto the actual travel path rather than a guessed one.

Harbourage

Harbourage is where pests shelter and breed: motor housings, hollow legs of equipment, wall cavities, false ceilings, drain sumps, and the warm gaps behind and beneath machinery. At night these locations are occupied and often audible. Identifying and then designing out harbourage is the most durable control you can achieve, and it is nearly impossible to locate accurately by day. Doors that seal in daylight can be propped for night dispatch. Roller shutters lift. Gaps under personnel doors become active rodent entries once the building settles. A night walk of the perimeter, looking inward, shows where light escapes and where pests come in.

UV torches and tracking technique

A 365 to 395nm ultraviolet torch is a diagnostic multiplier. Fresh rodent urine fluoresces a blue-white under UV, so a technician can trace urine trails, mark drops and contaminated surfaces that are completely invisible in white light. Certain rodenticide tracking powders and fluorescent non-toxic tracking gels are laid deliberately at suspected runs, then read under UV on a later night visit to confirm exactly which cracks and voids the animals travel through. Note that UV fluorescence is an indicator, not proof: optical brighteners in some detergents and papers also glow, so findings are corroborated with rub marks, droppings and live sightings before conclusions go into the report.

Practical technique matters. Work from clean areas toward suspected harbourage so you do not track contamination forward. Use a red-filtered white torch for movement (rodents and cockroaches are far less disturbed by red light) and switch to UV for trace evidence. Photograph everything with a scale marker for the audit pack, because a rub mark photographed at 22:00 with a timestamp is compelling evidence in a corrective-action file.

How the night audit complements the day programme

Night audits are not a replacement for routine servicing. Your daytime programme maintains the station network, records every check, feeds the trend graphs and lets technicians work safely around production and staff. The night audit is a targeted diagnostic layered on top of it. Use one when:

  • Trend analysis shows activity climbing in a zone but daytime checks cannot locate the source.
  • You are preparing for a BRCGS, FSSC 22000 or retailer audit and want to verify control, not assume it.
  • A building change, new line, extension, altered drainage, may have opened harbourage or entry routes.
