Rodents are the pest that most reliably ends a food safety audit badly, because they combine a serious health risk with visible, physical evidence an auditor can find in seconds, a smear mark, a gnawed cable, a dropping behind a pallet. Controlling them in a food processing plant is not about laying more poison; it is about a layered, documented integrated pest management (IPM) programme that keeps rodents out, detects the ones that get in, and proves the whole thing to a BRCGS or FSSC auditor. This is how such a programme is built.

Know the enemy: three commensal species
Effective control starts with correct identification, because each species dictates where you look and what you deploy.
- Brown / Norway rat (Rattus norvegicus), the largest of the three and a powerful burrower. It stays low, nests in ground-level voids, drains and burrows around the building perimeter, and rarely climbs high. Perimeter and ground-level defences target this species.
- Roof rat (Rattus rattus), a lean, agile climber that lives up high: roof voids, false ceilings, cable trays and elevated pipework. If you only look at floor level, you miss it. Elevated monitoring and proofing of roof services address it.
- House mouse (Mus musculus), small, inquisitive and highly mobile, nesting close to food and needing very little to survive. It enters through remarkably small gaps and explores new objects (which makes it responsive to monitoring devices). Dense internal monitoring is aimed at the mouse.
The exterior bait line: your first ring
The outermost layer of the programme is a line of secured, tamper-resistant toxic bait stations around the building's external perimeter, intercepting rodents before they reach the walls. Each station is numbered, fixed in place, mapped, and checked at every service. This exterior line is where toxic rodenticide belongs, outside, where a rodent that takes bait dies away from the production environment. This external ring is the first layer of our rodent control programmes.
The interior: monitor, don't poison
Inside the plant, the strategy inverts. The goal indoors is early detection and rapid removal, not poisoning, for two reasons an auditor will raise if you get it wrong. First, a rodent that eats poison inside can die and decompose in an inaccessible wall void or duct, creating an odour and a secondary insect problem. Second, toxic bait itself is a potential foreign-body and chemical contamination source in a food area.
So the interior uses non-toxic monitoring blocks to detect activity and feeding, plus mechanical devices for capture:
- Break-back (snap) traps are generally preferred in food areas: they kill quickly and contain the carcass in one known location for prompt, hygienic removal at the next check.
- Glue boards are used with caution and in line with welfare considerations and site policy; many manufacturers and schemes now restrict or avoid them, so their use should be justified, controlled and documented.
Proofing and harbourage: the work that actually reduces pressure
Bait and traps deal with rodents that are already inside. Proofing stops them getting in, and harbourage removal takes away the reason they stay, this is where lasting control is won.
Proofing means physically excluding rodents: bristle strips and tight seals under doors, sealing service penetrations where pipes and cables enter, screening drains and vents, and maintaining the building fabric. Remember the gaps, a mouse needs only a gap of a few millimetres.
Harbourage removal denies rodents food, water and shelter: no stock stored on the floor or against walls, a maintained 500 mm inspection zone along internal perimeters, prompt clean-up of spillages, sealed waste, controlled external vegetation and no redundant equipment or pallets creating nesting sites. A site with good sanitation needs far less intervention than one that leans on chemistry to compensate for a messy environment.
Trending: turning checks into a defensible system
Every device, exterior station, interior monitor, trap, is checked each service, and the findings (bait takes, catches, droppings, gnawing, sightings) are recorded against its number and zone. Those records are then trended over at least twelve months. Trending is what converts a stack of service slips into a managed system: a rising trend in a specific zone triggers investigation, a root-cause corrective action (a proofing or sanitation fix, not just another trap), and a documented close-out.
